Chia seeds are an ancient grain that are chock full of fiber and Omega-3 Fatty Acids. These power seeds help curb one’s appetite when added to meals or protein shakes. Here’s my simple no-cook chia seed pudding recipe for a healthy, vegan, gluten free snack, breakfast or dessert option. Enjoy!

Chia Seed Pudding 

Ingredients

¾ cup chia seeds

4 cups of almond milk, plain unsweetened

2 vanilla beans (remove seeds) or 2 tsp of natural vanilla extract

2 tbsp maple syrup

Directions

  • Mix all ingredients together in a glass jar
  • Cover
  • Shake
  • Refrigerate for an hour

* Top chia seed pudding with  berries, cacao nibs (or powder), ginger, cinnamon, and/or nuts

**Try chocolate almond milk to prepare chia seed pudding, kids love it!
